My favourite cold weather drink for hot summer days in a Mint Julipe. I first had one at Disneyland. When we returned home, I immediately sought out the recipe. Here it is!

Mint Julipe
simple syrup
lime juice
mint leaves (or a drop of mint flavouring)
tonic water or club soda

Make a simple syrup by mixing 1 cup water with one cup sugar over heat until dissolved. I then let it cool slightly before pouring into a mason jar for storage in the fridge. In a glass add mint leaves and simple syrup (enough to satisfy your sweet tooth). Brush the mint leaves by crishing them with a sppon to release the oils and flavour. Add a teaspoon or two of lime juice (again to your preference). Fill the rest of the glass with tomic water or club soda.

You may a bit of rum to create a Mojito if you choose.

This is such a light ans refreshing drink on a hot summer day.

Enjoy!
